Ingredients
For the Vada:
- 1 cup little millet (soaked 4–6 hours or overnight)
- 1 tbsp moong dal (optional, for softness)
- 1 tsp ginger paste
- 1–2 green chilies (chopped)
- Salt to taste
- A few curry leaves (chopped)
- Oil for shallow frying or steaming (for a healthier version)
For the Dahi (Yogurt) Mix:
- 2 cups curd (yogurt) – whisked
- Salt to taste
- ½ tsp roasted cumin powder
- A pinch of chaat masala
- ½ tsp red chili powder
- Fresh coriander leaves, chopped
Tempering (Optional):
- ½ tsp mustard seeds
- A pinch of asafoetida (hing)
- Curry leaves
- 1–2 dry red chilies
- 1 tsp oil
Instructions
- Prepare the Batter:
- Drain soaked little millet and grind into a coarse batter with minimal water.
- Mix in ginger, green chilies, salt, and curry leaves.
- Cook the Vadas:
- Shape small portions into rounds.
- Option 1: Shallow fry until golden brown.
- Option 2: Steam the batter in idli molds for a no-oil version.
- Soak the Vadas:
- Soak hot vadas in warm water for 5 minutes.
- Gently press to squeeze out excess water.
- Assemble the Dahi Vadas:
- Place vadas in a serving bowl.
- Pour whisked curd over them.
- Sprinkle cumin powder, red chili powder, chaat masala, and garnish with coriander.
- Tempering (Optional):
- Heat oil, splutter mustard seeds, add hing, curry leaves, red chilies, and pour over the dahi vadas.
